Parsley is small in size, and has small, flat, and deeply lobed leaves with long, slender, and thin stems. The vibrant green leaves are smooth and have scalloped-edges, and the pliable stems are light green and crisp. Parsley is tender with a fresh, strong grassy aroma and a tangy, green flavor mixed with notes of nutmeg, citrus, clove, reminiscent of celery, lemon, and pepper. Parsley is a good source of minerals such as iron, potassium, calcium and is high in antioxidants such as vitamin A and vitamin C.
